Ingredients:

  • 2 cups broccoli florets (about 200g)
  • 2 cups baby carrots or 2 large carrots, sliced (about 250g)
  • 1 tablespoon olive oil (15ml)
  • 1 teaspoon salt (5g)
  • 1/2 teaspoon black pepper (2.5g)
  • 1 lemon, juiced (about 2 tablespoons or 30ml)

Instructions:

  1. Rinse broccoli and carrots under cold water. If using whole carrots, peel and slice them into 1/4-inch thick rounds. Cut broccoli into bite-sized florets.
  2. Fill a pot with 1-2 inches of water and bring to a gentle simmer. Place the steamer basket over the pot, making sure it doesn’t touch the water.
  3. Add broccoli and carrots to the steamer basket. Cover with a lid and steam for 7-10 minutes until tender but still vibrant in color.
  4. Remove from heat and transfer steamed veggies to a bowl. Drizzle with olive oil, sprinkle with salt and pepper, and add lemon juice. Toss gently to combine.
  5. Enjoy immediately as a vibrant side dish!
