Ingredients:

  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste
  • 3 cups fresh or frozen corn kernels
  • 1 cup lump crabmeat, drained
  • 1 teaspoon Old Bay seasoning (optional)
  • 1 tablespoon fresh lemon juice
  • Fresh chives or parsley, for garnish

Instructions:

  1. Melt butter in a large pot over medium heat. Add onions and garlic, sauté until translucent, about 5 minutes.
  2. Pour in the vegetable broth and add the bay leaf. Bring to a simmer for about 10 minutes.
  3. Stir in the corn and simmer for another 15 minutes until softened.
  4. Remove the bay leaf. Blend the mixture using an immersion blender until smooth.
  5. Return the smooth mixture to the pot. Stir in heavy cream, crabmeat, Old Bay seasoning, and lemon juice. Heat gently, adjusting seasoning with salt and pepper.
  6. Ladle into bowls and garnish with chopped chives or parsley.
