Ingredients:
- 2 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 bay leaf
- Salt to taste
- Pepper to taste
- 3 cups fresh or frozen corn kernels
- 1 cup lump crabmeat, drained
- 1 teaspoon Old Bay seasoning (optional)
- 1 tablespoon fresh lemon juice
- Fresh chives or parsley, for garnish
Instructions:
- Melt butter in a large pot over medium heat. Add onions and garlic, sauté until translucent, about 5 minutes.
- Pour in the vegetable broth and add the bay leaf. Bring to a simmer for about 10 minutes.
- Stir in the corn and simmer for another 15 minutes until softened.
- Remove the bay leaf. Blend the mixture using an immersion blender until smooth.
- Return the smooth mixture to the pot. Stir in heavy cream, crabmeat, Old Bay seasoning, and lemon juice. Heat gently, adjusting seasoning with salt and pepper.
- Ladle into bowls and garnish with chopped chives or parsley.
