Ingredients:

  • 1 pound snow crab meat, shell-free
  • 1/4 cup mayonnaise, preferably Japanese or Kewpie
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh chives, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • Salt and pepper to taste
  • 4 top-split hot dog buns, preferably brioche-style
  • 2 tablespoons unsalted butter, for toasting
  • Optional: lettuce leaves or coleslaw for added crunch

Instructions:

  1. Gently pick through the snow crab meat to remove any shell fragments. In a mixing bowl, combine crab meat, mayonnaise, lemon juice, chives, dill, salt, and pepper. Stir until ingredients are well combined. Chill in the refrigerator for at least 30 minutes.
  2. Preheat a skillet or grill over medium heat. Spread unsalted butter on the cut sides of the buns. Toast the buns, cut-side down, until golden brown (about 3-5 minutes).
  3. Place a lettuce leaf or a small scoop of coleslaw in each bun (if using). Generously spoon the chilled crab mixture into each toasted bun.
  4. Serve immediately while buns are warm.
