Ingredients:

  • 250g (2 cups) All-Purpose Flour (plus extra for dusting)
  • 2 tbsp (25g) Granulated Sugar
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 2 Large Eggs, separated
  • 240ml (1 cup) Milk, whole or semi-skimmed is best
  • 60g (1/4 cup) Unsalted Butter, melted and cooled slightly
  • 1 tsp Vanilla Extract
  • Vegetable Oil or Cooking Spray, for greasing

Instructions:

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. Separate the egg yolks and egg whites into different bowls.
  3. In the bowl with the egg yolks, whisk in milk, melted butter, and vanilla extract until well combined.
  4. Gently pour the wet ingredients into the dry ingredients. Use a rubber spatula or wooden spoon to fold until just combined. Do not overmix; a few lumps are okay.
  5. In a clean, dry bowl, beat the egg whites with an electric mixer until stiff peaks form.
  6. Gently fold the beaten egg whites into the batter in two additions. Be careful not to deflate the egg whites.
  7. Let the batter rest for at least 15 minutes.
  8. Preheat your waffle iron according to the manufacturer's instructions. Grease the waffle iron lightly with vegetable oil or cooking spray.
  9. Pour the recommended amount of batter onto the hot waffle iron. Cook according to the waffle iron's instructions, usually until golden brown and crispy.
  10. Serve the waffles immediately with your favorite toppings.
