Ingredients:
- 250g (2 cups) All-Purpose Flour (plus extra for dusting)
- 2 tbsp (25g) Granulated Sugar
- 2 tsp Baking Powder
- 1/4 tsp Salt
- 2 Large Eggs, separated
- 240ml (1 cup) Milk, whole or semi-skimmed is best
- 60g (1/4 cup) Unsalted Butter, melted and cooled slightly
- 1 tsp Vanilla Extract
- Vegetable Oil or Cooking Spray, for greasing
Instructions:
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Separate the egg yolks and egg whites into different bowls.
- In the bowl with the egg yolks, whisk in milk, melted butter, and vanilla extract until well combined.
- Gently pour the wet ingredients into the dry ingredients. Use a rubber spatula or wooden spoon to fold until just combined. Do not overmix; a few lumps are okay.
- In a clean, dry bowl, beat the egg whites with an electric mixer until stiff peaks form.
- Gently fold the beaten egg whites into the batter in two additions. Be careful not to deflate the egg whites.
- Let the batter rest for at least 15 minutes.
- Preheat your waffle iron according to the manufacturer's instructions. Grease the waffle iron lightly with vegetable oil or cooking spray.
- Pour the recommended amount of batter onto the hot waffle iron. Cook according to the waffle iron's instructions, usually until golden brown and crispy.
- Serve the waffles immediately with your favorite toppings.
