Ingredients:
- 1.5 pounds (680g) cooked lobster meat, roughly chopped
- 2 tablespoons (30ml) fresh lemon juice
- 1/4 cup (60ml) mayonnaise
- 1 tablespoon (15ml) finely chopped celery (optional)
- 1 tablespoon (15ml) finely chopped fresh chives
- 1/4 teaspoon freshly cracked black pepper
- Pinch of sea salt
- 4 New England-style top-split hot dog buns
- 4 tablespoons (57g) unsalted butter, melted
Instructions:
- In a large bowl, gently combine the cooked lobster meat, lemon juice, mayonnaise, celery (if using), chives/scallions, black pepper, and salt. Taste and adjust seasonings. Cover and chill for 15 minutes.
- Brush the outside of each hot dog bun with melted butter.
- Toast the buns in a toaster or skillet until golden brown and crispy.
- Divide the chilled lobster mixture evenly among the toasted buns. Serve immediately for delicious lobster roll recipes.
