Ingredients:
- 12 Fresh Oysters, shucked and chilled
- 1 lb Cooked Shrimp, peeled and deveined
- 1 lb Cooked Mussels, steamed and chilled
- 1 lb Crab Legs, cooked and chilled
- 1 Lobster Tail, cooked, chilled, and halved (optional)
- Lemon Wedges, for garnish
- Fresh Parsley or Dill sprigs, for garnish
- Cracked Ice
- 1 cup Ketchup
- 2 tablespoons Prepared Horseradish
- 1 tablespoon Lemon Juice, freshly squeezed
- 1 teaspoon Worcestershire Sauce
- 1/4 teaspoon Hot Sauce
- 1/4 cup Red Wine Vinegar
- 2 tablespoons Shallots, finely minced
- 1 tablespoon Fresh Parsley, finely chopped
- Pinch of Black Pepper
- 1/2 cup Mayonnaise
- 2 cloves Garlic, minced
- 1 tablespoon Lemon Juice, freshly squeezed
- 1/4 teaspoon Dijon Mustard
- Pinch of Salt
- 1 ripe Mango, peeled, pitted, and diced
- 1/4 cup Red Onion, finely diced
- 1/4 cup Cilantro, chopped
- 1 Jalapeño, seeded and minced
- 2 tablespoons Lime Juice, freshly squeezed
- Pinch of Salt
Instructions:
- Prepare the Dipping Sauces: Combine each set of dipping sauce ingredients in separate bowls. Mix well and chill for at least 30 minutes to allow flavors to meld.
- Prepare the Seafood: Shuck the oysters (if not already shucked). Steam the mussels until they open, then chill. If desired, grill or broil shrimp or lobster tail until cooked through. Chill all seafood.
- Assemble the Tower: Cover the base of your seafood tower (or platter) with cracked ice.
- Arrange the Seafood: Artfully arrange the oysters, shrimp, mussels, crab legs, and lobster tail (if using) on the ice-filled tower. Prioritize height, balance and visual appeal.
- Garnish & Serve: Garnish with lemon wedges and fresh parsley/dill sprigs. Place the dipping sauce bowls around the base of the tower. Serve immediately.
