Ingredients:

  • 4 (6-ounce/170g) salmon fillets, skin on or off, pin bones removed
  • 2 tablespoons (30 ml) olive oil
  • 2 tablespoons (30 ml) fresh lemon juice
  • 2 cloves garlic, minced (about 1 teaspoon)
  • 1 tablespoon (15 ml) chopped fresh dill
  • 1 tablespoon (15 ml) chopped fresh parsley
  • 1/2 teaspoon (2.5 ml) salt
  • 1/4 teaspoon (1.25 ml) black pepper
  • Lemon slices, for garnish (optional)

Instructions:

  1. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dill, parsley, salt, and pepper.
  2. Place the salmon fillets in a shallow dish or zip-top bag. Pour the marinade over the salmon, ensuring it's evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  3. Preheat oven to 400°F (200°C). Line a baking sheet with aluminum foil or parchment paper for easy cleanup (optional).
  4. Place the marinated salmon fillets on the prepared baking sheet, skin-side down (if using skin-on fillets).
  5. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C). Don't overcook!
  6. Garnish with lemon slices (if desired) and serve immediately.
