Ingredients:
- 2 medium sweet potatoes (about 6-8 oz/170-225g each)
- 1 tablespoon olive oil (15 ml)
- ½ teaspoon sea salt (2.5 ml)
- ¼ teaspoon black pepper (1.25 ml)
Instructions:
- Preheat oven to 400°F (200°C). Make sure rack is in the center position.
- Wash and dry the sweet potatoes thoroughly.
- Use a fork to pierce each sweet potato several times all over. This prevents them from exploding!
- Rub the sweet potatoes with olive oil, then sprinkle generously with salt and pepper. Ensure even coverage.
- Place the sweet potatoes on the baking sheet and bake for 45-75 minutes, or until very soft and easily pierced with a fork. The skins should be slightly wrinkled.
- For extra assurance, check the internal temperature with an instant-read thermometer. It should be around 205-215°F (96-102°C).
- Carefully remove the sweet potatoes from the oven and let them cool slightly before serving. Slice open and add your favorite toppings.
