Ingredients:

  • 2 medium sweet potatoes (about 6-8 oz/170-225g each)
  • 1 tablespoon olive oil (15 ml)
  • ½ teaspoon sea salt (2.5 ml)
  • ¼ teaspoon black pepper (1.25 ml)

Instructions:

  1. Preheat oven to 400°F (200°C). Make sure rack is in the center position.
  2. Wash and dry the sweet potatoes thoroughly.
  3. Use a fork to pierce each sweet potato several times all over. This prevents them from exploding!
  4. Rub the sweet potatoes with olive oil, then sprinkle generously with salt and pepper. Ensure even coverage.
  5. Place the sweet potatoes on the baking sheet and bake for 45-75 minutes, or until very soft and easily pierced with a fork. The skins should be slightly wrinkled.
  6. For extra assurance, check the internal temperature with an instant-read thermometer. It should be around 205-215°F (96-102°C).
  7. Carefully remove the sweet potatoes from the oven and let them cool slightly before serving. Slice open and add your favorite toppings.
