Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined
- ½ cup (60g) cornstarch
- 1 large egg
- ½ cup (120ml) cold water
- Vegetable oil for frying (about 2 cups / 480ml)
- ½ cup (120ml) honey
- ¼ cup (60ml) mayonnaise
- 1 tsp (5ml) lemon juice
- Pinch of salt
- ½ cup (60g) walnuts, roughly chopped
- ¼ cup (50g) granulated sugar
- ¼ cup (60ml) water
Instructions:
- In a small saucepan, combine walnuts, sugar, and water. Cook over medium heat, stirring until the mixture thickens and coats the walnuts.
- Remove from heat and spread on parchment paper to cool.
- Pat shrimp dry and season lightly with salt.
- In a mixing bowl, whisk together cornstarch, egg, and cold water to form a batter.
- Dip each shrimp into the batter, allowing excess to drip off.
- Heat vegetable oil in a wok or deep frying pan to 350°F (175°C).
- Fry shrimp in batches, ensuring not to overcrowd the pan, until golden brown and crispy (about 2-3 minutes).
- Remove with a slotted spoon and drain on paper towels.
- In a bowl, combine honey, mayonnaise, lemon juice, and a pinch of salt. Whisk until smooth and well-blended.
- In a large mixing bowl, toss fried shrimp with honey sauce and top with candied walnuts.
- Serve immediately over steamed rice or alongside a fresh salad.
