Ingredients:
- 300 grams chicken breast, sliced
- 1/2 red sweet pepper, chopped
- 1/2 yellow sweet pepper, chopped
- 1/2 onion, chopped
- 3 green onions, cut into 2 cm pieces
- 1/4 cup roasted peanuts
- 2 stalks celery, chopped
- 1 tbsp oyster sauce
- 1 tsp chicken stock powder
- 1 tsp sugar
- 1 tsp light soy sauce
- 2 tbsp vegetable oil
Instructions:
- In a large frying pan or wok, heat 2 tbsp of oil over medium-high heat until shimmering.
- Add the sliced chicken and stir-fry until fully cooked and lightly browned, about 5-7 minutes.
- Stir in the chopped onion and sweet peppers. Cook for an additional 3-4 minutes until the vegetables are tender-crisp.
- Mix in the roasted peanuts, oyster sauce, light soy sauce, sugar, and chicken stock powder. Stir-fry for another 2-3 minutes to fully combine and allow flavors to meld.
- Add the green onions and celery, tossing everything together for an additional 2-3 minutes until heated through.
