Ingredients:

  • 300 grams chicken breast, sliced
  • 1/2 red sweet pepper, chopped
  • 1/2 yellow sweet pepper, chopped
  • 1/2 onion, chopped
  • 3 green onions, cut into 2 cm pieces
  • 1/4 cup roasted peanuts
  • 2 stalks celery, chopped
  • 1 tbsp oyster sauce
  • 1 tsp chicken stock powder
  • 1 tsp sugar
  • 1 tsp light soy sauce
  • 2 tbsp vegetable oil

Instructions:

  1. In a large frying pan or wok, heat 2 tbsp of oil over medium-high heat until shimmering.
  2. Add the sliced chicken and stir-fry until fully cooked and lightly browned, about 5-7 minutes.
  3. Stir in the chopped onion and sweet peppers. Cook for an additional 3-4 minutes until the vegetables are tender-crisp.
  4. Mix in the roasted peanuts, oyster sauce, light soy sauce, sugar, and chicken stock powder. Stir-fry for another 2-3 minutes to fully combine and allow flavors to meld.
  5. Add the green onions and celery, tossing everything together for an additional 2-3 minutes until heated through.
