Ingredients:

  • 1 lb top sirloin, cut into 1.5-inch cubes
  • 1 lb jumbo shrimp, peeled and deveined
  • 1 large red onion, cut into 1.5-inch chunks
  • 1 large red bell pepper, cut into 1.5-inch chunks
  • 1 medium zucchini, sliced into thick rounds
  • 1/2 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1 tbsp fresh parsley, finely chopped

Instructions:

  1. Divide the garlic-herb marinade ingredients (olive oil, lemon juice, garlic, paprika, salt, pepper, and parsley) into two separate mixing bowls.
  2. Toss the steak cubes in the first bowl and the shrimp in the second bowl. Let both marinate at room temperature for 30 minutes.
  3. Thread the ingredients onto metal skewers in a repeating pattern: steak, onion, shrimp, pepper, steak, zucchini, leaving small gaps between items for heat circulation.
  4. Preheat the grill to medium-high (400–450°F).
  5. Place skewers on the grill and sear for 3–4 minutes per side until the beef has a mahogany crust and shrimp are opaque.
