Ingredients:
- 1 lb top sirloin, cut into 1.5-inch cubes
- 1 lb jumbo shrimp, peeled and deveined
- 1 large red onion, cut into 1.5-inch chunks
- 1 large red bell pepper, cut into 1.5-inch chunks
- 1 medium zucchini, sliced into thick rounds
- 1/2 cup extra virgin olive oil
- 3 tbsp fresh lemon juice
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1 tbsp fresh parsley, finely chopped
Instructions:
- Divide the garlic-herb marinade ingredients (olive oil, lemon juice, garlic, paprika, salt, pepper, and parsley) into two separate mixing bowls.
- Toss the steak cubes in the first bowl and the shrimp in the second bowl. Let both marinate at room temperature for 30 minutes.
- Thread the ingredients onto metal skewers in a repeating pattern: steak, onion, shrimp, pepper, steak, zucchini, leaving small gaps between items for heat circulation.
- Preheat the grill to medium-high (400–450°F).
- Place skewers on the grill and sear for 3–4 minutes per side until the beef has a mahogany crust and shrimp are opaque.
