Ingredients:

  • 6 cups Peaches (fresh, frozen, or drained canned)
  • 1/2 cup Granulated Sugar (for filling)
  • 1/4 cup Brown Sugar
  • 1 Tbsp Cornstarch
  • 1/2 tsp Ground Cinnamon
  • 1 1/2 cups All-Purpose Flour
  • 3/4 cup Granulated Sugar (for batter)
  • 1 Tbsp Baking Powder
  • 1 1/2 cups Milk (Whole or 2%)
  • 1/2 tsp Salt
  • 1 stick (1/2 cup) Unsalted Butter

Instructions:

  1. Preheat the oven to 350°F (175°C). Place the stick of unsalted butter directly into a 9x13 inch baking dish. Place the dish in the preheating oven to fully melt the butter while the oven heats.
  2. Prepare the filling: In a large bowl, combine the peaches, 1/2 cup granulated sugar, brown sugar, cornstarch, and ground cinnamon. Toss gently until the peaches are well coated and set aside.
  3. Prepare the batter: In a separate mixing bowl, whisk together the all-purpose flour, 3/4 cup granulated sugar, baking powder, and salt. Gradually whisk in the milk until the batter is just combined and smooth (do not overmix).
  4. Assemble the cobbler: Carefully remove the hot baking dish with the melted butter from the oven. Pour the prepared batter directly over the hot melted butter. DO NOT stir the batter and butter.
  5. Spoon the peach filling evenly over the top of the batter. The peaches will begin to settle into the batter and butter mixture.
  6. Bake for 40 minutes, or until the topping is puffed, golden brown, and the filling is bubbly and thick. Allow to cool slightly before serving.
