Ingredients:
- 6 cups Peaches (fresh, frozen, or drained canned)
- 1/2 cup Granulated Sugar (for filling)
- 1/4 cup Brown Sugar
- 1 Tbsp Cornstarch
- 1/2 tsp Ground Cinnamon
- 1 1/2 cups All-Purpose Flour
- 3/4 cup Granulated Sugar (for batter)
- 1 Tbsp Baking Powder
- 1 1/2 cups Milk (Whole or 2%)
- 1/2 tsp Salt
- 1 stick (1/2 cup) Unsalted Butter
Instructions:
- Preheat the oven to 350°F (175°C). Place the stick of unsalted butter directly into a 9x13 inch baking dish. Place the dish in the preheating oven to fully melt the butter while the oven heats.
- Prepare the filling: In a large bowl, combine the peaches, 1/2 cup granulated sugar, brown sugar, cornstarch, and ground cinnamon. Toss gently until the peaches are well coated and set aside.
- Prepare the batter: In a separate mixing bowl, whisk together the all-purpose flour, 3/4 cup granulated sugar, baking powder, and salt. Gradually whisk in the milk until the batter is just combined and smooth (do not overmix).
- Assemble the cobbler: Carefully remove the hot baking dish with the melted butter from the oven. Pour the prepared batter directly over the hot melted butter. DO NOT stir the batter and butter.
- Spoon the peach filling evenly over the top of the batter. The peaches will begin to settle into the batter and butter mixture.
- Bake for 40 minutes, or until the topping is puffed, golden brown, and the filling is bubbly and thick. Allow to cool slightly before serving.
