Ingredients:

  • 1.5 lbs (680g) firm white fish fillets (cod, haddock, or snapper)
  • 1/4 cup (60ml) extra virgin olive oil
  • 1 medium lemon, thinly sliced
  • 4 cloves garlic, minced
  • 1/4 cup (packed) fresh parsley, chopped
  • 1/4 cup (packed) fresh oregano, chopped
  • 1/4 cup (packed) fresh dill, chopped
  • 1/2 teaspoon dried red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Optional: Cherry tomatoes, halved, olives, quartered (Kalamata are great)

Instructions:

  1. In a small bowl, whisk together olive oil, minced garlic, chopped parsley, oregano, dill, red pepper flakes (if using), salt, and pepper.
  2. Place the fish fillets in the baking dish. Pour the marinade over the fish, ensuring each fillet is well coated.
  3. Tuck lemon slices around and underneath the fish fillets. If using, scatter the cherry tomatoes and olives around the fish.
  4. Preheat oven to 400°F (200°C). Bake for 20-25 minutes, or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  5. Garnish with fresh parsley and lemon wedges. Serve hot.
