Ingredients:
- 1.5 lbs (680g) firm white fish fillets (cod, haddock, or snapper)
- 1/4 cup (60ml) extra virgin olive oil
- 1 medium lemon, thinly sliced
- 4 cloves garlic, minced
- 1/4 cup (packed) fresh parsley, chopped
- 1/4 cup (packed) fresh oregano, chopped
- 1/4 cup (packed) fresh dill, chopped
- 1/2 teaspoon dried red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- Optional: Cherry tomatoes, halved, olives, quartered (Kalamata are great)
Instructions:
- In a small bowl, whisk together olive oil, minced garlic, chopped parsley, oregano, dill, red pepper flakes (if using), salt, and pepper.
- Place the fish fillets in the baking dish. Pour the marinade over the fish, ensuring each fillet is well coated.
- Tuck lemon slices around and underneath the fish fillets. If using, scatter the cherry tomatoes and olives around the fish.
- Preheat oven to 400°F (200°C). Bake for 20-25 minutes, or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- Garnish with fresh parsley and lemon wedges. Serve hot.
