Ingredients:

  • 1.5 lb center-cut salmon fillet, skinless
  • 1 large lemon, thinly sliced into rounds
  • 2 tbsp neutral oil
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 3 tbsp melted unsalted butter
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/2 tsp smoked paprika

Instructions:

  1. Cut the salmon into uniform 1-inch cubes.
  2. In a small bowl, whisk together the melted butter, honey, soy sauce, garlic, ginger, and smoked paprika to create the flash-glaze.
  3. Thread the salmon cubes onto skewers, alternating each piece of fish with a lemon slice.
  4. Lightly brush the salmon with neutral oil and season with salt and pepper.
  5. Preheat grill to high heat (approx. 400°F / 200°C), ensuring grates are clean and lightly oiled.
  6. Place skewers on the grill, close the lid, and sear for 3–4 minutes without moving them.
  7. Open the lid and generously brush the top of the salmon with the flash-marinade, then flip the skewers and brush the other side.
  8. Grill for another 3–4 minutes until the exterior is charred and the interior is cooked to preference.
