Ingredients:

  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 4 (6 oz) cod fillets

Instructions:

  1. Whisk together the olive oil, lemon juice, minced garlic, smoked paprika, salt, and pepper in a small bowl.
  2. Pat the cod fillets dry and gently coat them in the marinade, ensuring every surface is covered. Let them sit for 5–10 minutes at room temperature.
  3. Preheat the grill to medium-high heat (approximately 400°F / 200°C). Clean and lightly oil the grates.
  4. Place the fillets on the grill. Sear for 4–5 minutes per side without moving them until the fish releases naturally and develops a mahogany-colored crust.
  5. Remove the fillets from the grill when the internal temperature reaches 135°F (57°C).
  6. Transfer the fillets to a warm plate and let them rest for 3 minutes until the internal temperature reaches 145°F (63°C).
