Ingredients:
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 4 (6 oz) cod fillets
Instructions:
- Whisk together the olive oil, lemon juice, minced garlic, smoked paprika, salt, and pepper in a small bowl.
- Pat the cod fillets dry and gently coat them in the marinade, ensuring every surface is covered. Let them sit for 5–10 minutes at room temperature.
- Preheat the grill to medium-high heat (approximately 400°F / 200°C). Clean and lightly oil the grates.
- Place the fillets on the grill. Sear for 4–5 minutes per side without moving them until the fish releases naturally and develops a mahogany-colored crust.
- Remove the fillets from the grill when the internal temperature reaches 135°F (57°C).
- Transfer the fillets to a warm plate and let them rest for 3 minutes until the internal temperature reaches 145°F (63°C).
