Ingredients:
- 8 medium fresh oysters, shucked (approximately 450g)
- 2 ripe avocados, halved and pitted (about 400g)
- 1 cup cooked crab meat (120g)
- 1/4 cup diced red bell pepper (40g)
- 1/4 cup finely chopped green onions (40g)
- 1/4 cup mayonnaise (65g)
- 1 tablespoon fresh lime juice (15ml)
- 1 teaspoon Dijon mustard (5g)
- Salt and pepper to taste
- 1 tablespoon chopped fresh cilantro (optional)
Instructions:
- Use an oyster knife to carefully shuck the oysters, retaining the shell and liquid. Rinse them under cold water and set aside on a platter.
- Slice the avocados in half and remove the pit. Scoop a little more flesh from the center to create space for the filling.
- In a mixing bowl, combine cooked crab meat, diced red bell pepper, chopped green onions, mayonnaise, lime juice, Dijon mustard, and cilantro (if using). Fold gently until well mixed. Season with salt and pepper to taste.
- Carefully spoon the filling into each shucked oyster shell. Place an avocado half on the platter and nestle the stuffed oyster into the center of the avocado half.
- Chill in the refrigerator for about 15 minutes before serving to enhance flavors. Serve cold, garnished with additional cilantro if desired.
