Ingredients:

  • 4 large eggs (200 g)
  • 1 cup broccoli florets, chopped (90 g)
  • 1 cup bell peppers, diced (150 g, any color)
  • ½ cup cherry tomatoes, halved (75 g)
  • ¼ cup green onions, sliced (30 g)
  • 1 tablespoon olive oil (15 ml)
  • Salt and pepper, to taste
  • Fresh herbs (e.g., cilantro or parsley) for garnish (optional)
  • Hot sauce or soy sauce for drizzling (optional)

Instructions:

  1. Wash and chop broccoli, bell peppers, and cherry tomatoes. Slice green onions.
  2. Crack the eggs into a mixing bowl and whisk until well combined. Season with salt and pepper.
  3. Fill a pot with water and bring it to a gentle boil. Place the steamer basket over the pot.
  4. Add broccoli and bell peppers to the steamer basket. Cover and steam for 5 minutes until slightly tender.
  5. Pour the whisked eggs evenly over the steamed vegetables. Scatter halved cherry tomatoes and green onions on top.
  6. Cover and steam for an additional 8-10 minutes, or until the eggs are set.
  7. Carefully remove the steamer basket. Drizzle with olive oil and garnish with fresh herbs. Serve warm.
