Ingredients:
- 4 large eggs (200 g)
- 1 cup broccoli florets, chopped (90 g)
- 1 cup bell peppers, diced (150 g, any color)
- ½ cup cherry tomatoes, halved (75 g)
- ¼ cup green onions, sliced (30 g)
- 1 tablespoon olive oil (15 ml)
- Salt and pepper, to taste
- Fresh herbs (e.g., cilantro or parsley) for garnish (optional)
- Hot sauce or soy sauce for drizzling (optional)
Instructions:
- Wash and chop broccoli, bell peppers, and cherry tomatoes. Slice green onions.
- Crack the eggs into a mixing bowl and whisk until well combined. Season with salt and pepper.
- Fill a pot with water and bring it to a gentle boil. Place the steamer basket over the pot.
- Add broccoli and bell peppers to the steamer basket. Cover and steam for 5 minutes until slightly tender.
- Pour the whisked eggs evenly over the steamed vegetables. Scatter halved cherry tomatoes and green onions on top.
- Cover and steam for an additional 8-10 minutes, or until the eggs are set.
- Carefully remove the steamer basket. Drizzle with olive oil and garnish with fresh herbs. Serve warm.
