Ingredients:

  • 1 tablespoon coconut oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (14 oz) coconut milk
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce or tamari
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 pound prawns, peeled and deveined
  • 2 tablespoons lime juice (for marinating)
  • 1 teaspoon salt (for marinating)
  • Fresh cilantro or parsley, for garnish

Instructions:

  1. In a mixing bowl, combine prawns, lime juice, and salt. Let marinate for 10 minutes.
  2. Heat coconut oil in a large skillet over medium heat. Sauté minced garlic and grated ginger until fragrant (about 1-2 minutes).
  3. Pour in coconut milk and add brown sugar, soy sauce, and lime juice. Stir to combine.
  4. Add marinated prawns to the skillet. Cook until prawns turn pink and opaque (about 3-5 minutes), stirring occasionally.
  5. Adjust seasoning with salt and pepper to taste. Garnish with fresh cilantro or parsley. Serve hot over rice or noodles, if desired.
