Ingredients:
- 1 tablespoon coconut oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 can (14 oz) coconut milk
- 1 tablespoon brown sugar
- 1 tablespoon soy sauce or tamari
- Juice of 1 lime
- Salt and pepper to taste
- 1 pound prawns, peeled and deveined
- 2 tablespoons lime juice (for marinating)
- 1 teaspoon salt (for marinating)
- Fresh cilantro or parsley, for garnish
Instructions:
- In a mixing bowl, combine prawns, lime juice, and salt. Let marinate for 10 minutes.
- Heat coconut oil in a large skillet over medium heat. Sauté minced garlic and grated ginger until fragrant (about 1-2 minutes).
- Pour in coconut milk and add brown sugar, soy sauce, and lime juice. Stir to combine.
- Add marinated prawns to the skillet. Cook until prawns turn pink and opaque (about 3-5 minutes), stirring occasionally.
- Adjust seasoning with salt and pepper to taste. Garnish with fresh cilantro or parsley. Serve hot over rice or noodles, if desired.
