Ingredients:

  • 1 lb (450 g) large prawns, peeled and deveined
  • 4 cups (120 g) fresh spinach leaves, washed and dried
  • 3 tbsp (45 ml) olive oil
  • 3 cloves garlic, minced
  • 1 tsp (5 g) red pepper flakes
  • Salt and black pepper, to taste
  • Juice of 1 lemon (about 2 tbsp or 30 ml)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Peel and devein the prawns, if not already done. Wash and dry the spinach, and mince the garlic.
  2. Place a large skillet over medium-high heat and add olive oil.
  3. Once the oil is hot, add minced garlic and red pepper flakes. Sauté for 30 seconds until fragrant.
  4. Add the prawns to the skillet in a single layer. Season with salt and pepper. Sauté for 2-3 minutes until pink and opaque.
  5. Stir the spinach into the skillet. Cook for an additional 1-2 minutes until wilted.
  6. Squeeze fresh lemon juice over the dish, and give everything a final toss.
  7. Transfer to a serving platter or individual plates and garnish with chopped parsley.
