Ingredients:
- 1 lb (450 g) large prawns, peeled and deveined
- 4 cups (120 g) fresh spinach leaves, washed and dried
- 3 tbsp (45 ml) olive oil
- 3 cloves garlic, minced
- 1 tsp (5 g) red pepper flakes
- Salt and black pepper, to taste
- Juice of 1 lemon (about 2 tbsp or 30 ml)
- Fresh parsley, chopped (for garnish)
Instructions:
- Peel and devein the prawns, if not already done. Wash and dry the spinach, and mince the garlic.
- Place a large skillet over medium-high heat and add olive oil.
- Once the oil is hot, add minced garlic and red pepper flakes. Sauté for 30 seconds until fragrant.
- Add the prawns to the skillet in a single layer. Season with salt and pepper. Sauté for 2-3 minutes until pink and opaque.
- Stir the spinach into the skillet. Cook for an additional 1-2 minutes until wilted.
- Squeeze fresh lemon juice over the dish, and give everything a final toss.
- Transfer to a serving platter or individual plates and garnish with chopped parsley.
