Ingredients:

  • 1/4 cup olive oil (60 ml)
  • 3 tablespoons soy sauce (45 ml)
  • 1 tablespoon honey (15 g)
  • 2 tablespoons freshly squeezed lime juice (30 ml)
  • 1 teaspoon red chili flakes (5 g)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin (5 g)
  • Salt and pepper to taste
  • 4 (6-ounce) fillets of firm white fish (e.g., snapper, tilapia, or cod)
  • Fresh cilantro or parsley, for garnish
  • Lime wedges, for serving

Instructions:

  1. In a mixing bowl, combine olive oil, soy sauce, honey, lime juice, red chili flakes, garlic, ginger, cumin, salt, and pepper. Whisk until well blended.
  2. Place fish fillets in a shallow dish or resealable plastic bag. Pour the marinade over the fish, ensuring all surfaces are coated. Cover or seal and refrigerate for at least 30 minutes.
  3. Prepare your grill for medium-high heat, ensuring grates are clean.
  4. Remove the fish from the marinade and let excess marinade drip off. Place fillets on the grill, skin-side down if applicable. Cook for about 4-5 minutes per side.
  5. Flip carefully and cook until fish is opaque and flakes easily with a fork, about 10 minutes total.
  6. Remove from grill, garnish with fresh herbs, and serve with lime wedges.
