Ingredients:
- 4 tbsp unsalted butter
- 1 tsp red chili flakes
- 1 tbsp fresh lemon juice
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 1 lb cooked lobster meat
- 4 6-inch top-split New England style buns
- 2 tbsp melted butter
- 1 tbsp fresh chives, finely chopped
- pinch of flaky sea salt
Instructions:
- Place a saucepan over medium-low heat and melt 4 tbsp of butter until it begins to foam.
- Stir in the red chili flakes, garlic powder, and smoked paprika. Whisk constantly for 60 seconds until the butter is fragrant and deep orange.
- Remove the pan from heat and stir in the lemon juice to create a glossy, thickened glaze.
- Increase the saucepan heat to medium. Once the butter bubbles, add the cooked lobster meat and toss gently for 2–3 minutes until glistening and just barely opaque.
- Heat a skillet over medium-high heat and add 2 tbsp of melted butter.
- Place the split buns face-down in the skillet and toast until they achieve a golden, shattering crust.
- Fill the toasted buns with the spiced lobster mixture, garnish with chopped chives, and finish with a pinch of flaky sea salt.
