Ingredients:

  • 4 tbsp unsalted butter
  • 1 tsp red chili flakes
  • 1 tbsp fresh lemon juice
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1 lb cooked lobster meat
  • 4 6-inch top-split New England style buns
  • 2 tbsp melted butter
  • 1 tbsp fresh chives, finely chopped
  • pinch of flaky sea salt

Instructions:

  1. Place a saucepan over medium-low heat and melt 4 tbsp of butter until it begins to foam.
  2. Stir in the red chili flakes, garlic powder, and smoked paprika. Whisk constantly for 60 seconds until the butter is fragrant and deep orange.
  3. Remove the pan from heat and stir in the lemon juice to create a glossy, thickened glaze.
  4. Increase the saucepan heat to medium. Once the butter bubbles, add the cooked lobster meat and toss gently for 2–3 minutes until glistening and just barely opaque.
  5. Heat a skillet over medium-high heat and add 2 tbsp of melted butter.
  6. Place the split buns face-down in the skillet and toast until they achieve a golden, shattering crust.
  7. Fill the toasted buns with the spiced lobster mixture, garnish with chopped chives, and finish with a pinch of flaky sea salt.
