Ingredients:
- 1 lb (450 g) large uncooked king prawns, peeled and deveined
- 2 tablespoons (30 mL) vegetable oil
- 1 tablespoon (15 g) fresh ginger, minced
- 2 cloves garlic, minced
- 1 stalk lemongrass, finely chopped
- 1-2 fresh red chilies, thinly sliced
- 1 tablespoon (15 mL) fish sauce
- 2 tablespoons (30 mL) lime juice
- 1 tablespoon (15 g) brown sugar
- Salt and pepper to taste
- Fresh cilantro leaves, chopped, for garnish
- Lime wedges, for garnish
Instructions:
- Peel and devein the king prawns. Mince the ginger and garlic. Finely chop the lemongrass and slice the chilies.
- In a large sauté pan or wok, heat the vegetable oil over medium-high heat.
- Add ginger and garlic to the pan, stirring until fragrant (about 30 seconds). Add chopped lemongrass and sliced chilies; sauté for an additional minute.
- Add the prawns to the pan; sauté until they turn pink and opaque (about 3-4 minutes). Season with fish sauce, lime juice, brown sugar, salt, and pepper.
- Cook for another 1-2 minutes until thoroughly heated.
- Remove from heat and garnish with fresh cilantro and lime wedges. Serve immediately.
