Ingredients:
- 1 lb (450g) king prawns, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 can (14 oz / 400ml) coconut milk
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 teaspoon brown sugar
- 1 tablespoon fresh cilantro, chopped (for garnish)
- 1 fresh red chili, sliced (optional, for heat)
Instructions:
- Rinse and pat the king prawns dry. Season with paprika, salt, and pepper.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and grated ginger to the skillet; sauté until fragrant, about 1 minute.
- Add the seasoned prawns to the skillet; cook until they turn pink and are opaque, approximately 3-4 minutes. Remove prawns and set aside.
- In the same skillet, pour in coconut milk, soy sauce, lime juice, and brown sugar; stir to combine. Simmer for about 3-4 minutes until slightly thickened.
- Return prawns to the skillet, stirring to coat in the sauce; cook for an additional 1-2 minutes to heat through.
- Garnish with chopped cilantro and sliced chili if desired.
