Ingredients:

  • 1 lb (450g) king prawns, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 can (14 oz / 400ml) coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • 1 tablespoon fresh cilantro, chopped (for garnish)
  • 1 fresh red chili, sliced (optional, for heat)

Instructions:

  1. Rinse and pat the king prawns dry. Season with paprika, salt, and pepper.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and grated ginger to the skillet; sauté until fragrant, about 1 minute.
  4. Add the seasoned prawns to the skillet; cook until they turn pink and are opaque, approximately 3-4 minutes. Remove prawns and set aside.
  5. In the same skillet, pour in coconut milk, soy sauce, lime juice, and brown sugar; stir to combine. Simmer for about 3-4 minutes until slightly thickened.
  6. Return prawns to the skillet, stirring to coat in the sauce; cook for an additional 1-2 minutes to heat through.
  7. Garnish with chopped cilantro and sliced chili if desired.
