Ingredients:
- 1 cup (100g) dried prawns, rinsed and soaked in warm water for 10 minutes
- 2 tablespoons (30ml) vegetable oil (canola or sunflower)
- 2 cloves garlic, minced
- 1 small onion, thinly sliced
- 1 bell pepper (red or green), sliced
- 1 medium carrot, julienned
- 2 cups (150g) bok choy, chopped
- 2 tablespoons (30ml) soy sauce
- 1 tablespoon (15ml) oyster sauce
- 1 teaspoon (5g) sugar (optional, for balance)
- 1 teaspoon (5g) freshly ground black pepper
- Fresh cilantro or scallions, chopped for garnish
Instructions:
- Rinse dried prawns and soak in warm water for 10 minutes. Drain and set aside. Slice onion, bell pepper, and carrot; chop bok choy.
- In a wok or skillet, heat vegetable oil over medium-high heat until shimmering.
- Add minced garlic and sliced onion; sauté until fragrant and translucent (about 2 minutes).
- Add bell pepper and carrot; stir-fry for 3-4 minutes until slightly tender.
- Add soaked dried prawns and stir well until combined (about 2 minutes).
- Stir in chopped bok choy, soy sauce, oyster sauce, sugar (if using), and black pepper; cook for an additional 2-3 minutes until bok choy is tender.
- Remove from heat, garnish with cilantro or scallions, and serve immediately.
