Ingredients:

  • 1 cup (100g) dried prawns, rinsed and soaked in warm water for 10 minutes
  • 2 tablespoons (30ml) vegetable oil (canola or sunflower)
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 bell pepper (red or green), sliced

  • 1 teaspoon (5g) freshly ground black pepper

  3. Add minced garlic and sliced onion; sauté until fragrant and translucent (about 2 minutes).
  4. Add bell pepper and carrot; stir-fry for 3-4 minutes until slightly tender.
  5. Add soaked dried prawns and stir well until combined (about 2 minutes).
  6. Stir in chopped bok choy, soy sauce, oyster sauce, sugar (if using), and black pepper; cook for an additional 2-3 minutes until bok choy is tender.
  7. Remove from heat, garnish with cilantro or scallions, and serve immediately.
