Ingredients:

  • 2 (6 oz / 170g each) salmon fillets, skin on or off
  • 1 tablespoon (15 ml) olive oil
  • 1 lemon, thinly sliced (about 6-8 slices)
  • 2 cloves garlic, minced
  • 1/4 teaspoon (1.5 ml) salt
  • 1/8 teaspoon (0.75 ml) black pepper
  • 1 tablespoon (15 ml) fresh dill, chopped (or 1 teaspoon dried dill)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Pat salmon fillets dry with paper towels.
  3. In a small bowl, whisk together olive oil, minced garlic, salt, and pepper.
  4. Line baking sheet with parchment paper (optional). Arrange lemon slices on the baking sheet, creating a bed for the salmon.
  5. Place salmon fillets on top of the lemon slices. Brush the garlic lemon mixture over the salmon fillets.
  6. Bake for 8-10 minutes, or until salmon is cooked through and flakes easily with a fork. If you have a meat thermometer, aim for 145°F (63°C).
  7. Sprinkle with chopped fresh dill and serve immediately.
