Ingredients:

  • 1 pound (450g) large prawns, peeled and deveined
  • 2 tablespoons (30ml) olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon (5g) red pepper flakes (optional)
  • Salt and pepper, to taste
  • Juice of 1 lemon
  • 4 cups (150g) fresh spinach, washed and roughly chopped
  • 1 tablespoon (15ml) lemon juice
  • 1 tablespoon (15g) unsalted butter
  • ¼ teaspoon (1.25g) nutmeg (optional)

Instructions:

  1. Prepare the ingredients: peel and devein the prawns if necessary, wash and chop the spinach, and mince the garlic.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and red pepper flakes; sauté for about 30 seconds until fragrant.
  3. Add the prawns, season with salt and pepper, and cook until they turn pink, around 3-4 minutes.
  4. Stir in the chopped spinach and butter; cook until the spinach wilts, about 2-3 minutes. Add lemon juice and nutmeg, tossing to combine.
  5. Plate the dish, garnishing with additional lemon juice if desired. Enjoy warm.
