Ingredients:
- 1 pound (450g) large prawns, peeled and deveined
- 2 tablespoons (30ml) olive oil
- 3 cloves garlic, minced
- 1 teaspoon (5g) red pepper flakes (optional)
- Salt and pepper, to taste
- Juice of 1 lemon
- 4 cups (150g) fresh spinach, washed and roughly chopped
- 1 tablespoon (15ml) lemon juice
- 1 tablespoon (15g) unsalted butter
- ¼ teaspoon (1.25g) nutmeg (optional)
Instructions:
- Prepare the ingredients: peel and devein the prawns if necessary, wash and chop the spinach, and mince the garlic.
- Heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and red pepper flakes; sauté for about 30 seconds until fragrant.
- Add the prawns, season with salt and pepper, and cook until they turn pink, around 3-4 minutes.
- Stir in the chopped spinach and butter; cook until the spinach wilts, about 2-3 minutes. Add lemon juice and nutmeg, tossing to combine.
- Plate the dish, garnishing with additional lemon juice if desired. Enjoy warm.
