Ingredients:

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 4 chicken quarters (approximately 1.5 lbs total)

Instructions:

  1. In a mixing bowl, combine olive oil, apple cider vinegar, honey, minced garlic, smoked paprika, oregano, thyme, salt, and pepper. Whisk until well blended.
  2. Place the chicken quarters in a zip-top bag or marinating container. Pour the marinade over the chicken, ensuring even coverage. Seal or cover and refrigerate for at least 1 hour.
  3. Heat the grill to medium-high heat (about 375°F or 190°C).
  4. Remove chicken from marinade, allowing excess marinade to drip off. Place chicken skin-side down on the grill. Close the lid and grill for about 15-20 minutes.
  5. Flip the chicken quarters and continue grilling for another 15-20 minutes or until internal temperature reaches 165°F (74°C). Baste with marinade during the last 5 minutes if desired.
  6. Remove chicken from the grill, cover with foil, and let rest for 5-10 minutes before serving.
