Ingredients:
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- 4 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 4 chicken quarters (approximately 1.5 lbs total)
Instructions:
- In a mixing bowl, combine olive oil, apple cider vinegar, honey, minced garlic, smoked paprika, oregano, thyme, salt, and pepper. Whisk until well blended.
- Place the chicken quarters in a zip-top bag or marinating container. Pour the marinade over the chicken, ensuring even coverage. Seal or cover and refrigerate for at least 1 hour.
- Heat the grill to medium-high heat (about 375°F or 190°C).
- Remove chicken from marinade, allowing excess marinade to drip off. Place chicken skin-side down on the grill. Close the lid and grill for about 15-20 minutes.
- Flip the chicken quarters and continue grilling for another 15-20 minutes or until internal temperature reaches 165°F (74°C). Baste with marinade during the last 5 minutes if desired.
- Remove chicken from the grill, cover with foil, and let rest for 5-10 minutes before serving.
