Ingredients:
- 2 lbs (900g) Yukon Gold or red potatoes, scrubbed and cut into 1-inch (2.5cm) chunks
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon smoked paprika (optional, for extra smokiness)
- 1/2 cup (113g) unsalted butter, softened
- 4 cloves garlic, minced
- 2 tablespoons finely chopped fresh parsley
- 1 tablespoon finely chopped fresh rosemary
- 1 tablespoon finely chopped fresh thyme
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Instructions:
- Toss the potatoes with olive oil, salt, pepper, and smoked paprika (if using) in a large bowl. Ensure they are evenly coated.
- Preheat your grill to medium heat (around 350-400°F or 175-200°C). If using a charcoal grill, make sure the coals are evenly distributed.
- Place the potatoes in a grill basket or directly on the grill grates. Grill, turning occasionally, until tender and slightly charred, about 25-35 minutes.
- While the potatoes are grilling, combine the softened butter, minced garlic, parsley, rosemary, thyme, salt, and pepper in a small bowl. Mix well until evenly combined.
- Once the potatoes are cooked through, remove them from the grill. Immediately toss them with the garlic-herb butter. Serve hot and enjoy!
