Ingredients:

  • 2 lbs (900g) Yukon Gold or red potatoes, scrubbed and cut into 1-inch (2.5cm) chunks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon smoked paprika (optional, for extra smokiness)
  • 1/2 cup (113g) unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh rosemary
  • 1 tablespoon finely chopped fresh thyme
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Instructions:

  1. Toss the potatoes with olive oil, salt, pepper, and smoked paprika (if using) in a large bowl. Ensure they are evenly coated.
  2. Preheat your grill to medium heat (around 350-400°F or 175-200°C). If using a charcoal grill, make sure the coals are evenly distributed.
  3. Place the potatoes in a grill basket or directly on the grill grates. Grill, turning occasionally, until tender and slightly charred, about 25-35 minutes.
  4. While the potatoes are grilling, combine the softened butter, minced garlic, parsley, rosemary, thyme, salt, and pepper in a small bowl. Mix well until evenly combined.
  5. Once the potatoes are cooked through, remove them from the grill. Immediately toss them with the garlic-herb butter. Serve hot and enjoy!
