- 1 teaspoon Dijon mustard
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano or 1 tablespoon fresh, chopped
- ½ teaspoon ground cumin (optional, for warmth)
- Salt, to taste (about 1 teaspoon)
- Freshly ground black pepper, to taste
- Fresh parsley, chopped (2 tablespoons)
- Lemon wedges (1 lemon, cut into wedges)
Instructions:
- Prepare the cauliflower: Remove the leaves and trim the stem, keeping the core intact. Slice into ¾-inch thick steaks; reserve smaller pieces for grilling.
- Make the marinade: Whisk together olive oil, minced garlic, lemon juice, Dijon mustard, smoked paprika, oregano, cumin, salt, and pepper in a bowl.
- Marinate the cauliflower steaks: Coat the steaks evenly with the marinade and let sit for at least 30 minutes (or up to 2 hours in the fridge) for fuller flavor.
- Preheat the grill: Heat your outdoor grill to medium-high or prepare an indoor grill pan until hot with visible grill marks.
- Grill the cauliflower: Place the marinated steaks on the grill and cook for 5-7 minutes per side until tender and nicely charred.
- Serve: Transfer to a serving platter, garnish with chopped parsley and lemon wedges, and enjoy your delicious grilled cauliflower.
