  • 1 tablespoon (15 ml) fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano or 1 tablespoon fresh, chopped
  • ½ teaspoon ground cumin (optional, for warmth)
  • Salt, to taste (about 1 teaspoon)
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped (2 tablespoons)
  • Lemon wedges (1 lemon, cut into wedges)

Instructions:

  1. Prepare the cauliflower: Remove the leaves and trim the stem, keeping the core intact. Slice into ¾-inch thick steaks; reserve smaller pieces for grilling.
  2. Make the marinade: Whisk together olive oil, minced garlic, lemon juice, Dijon mustard, smoked paprika, oregano, cumin, salt, and pepper in a bowl.
  3. Marinate the cauliflower steaks: Coat the steaks evenly with the marinade and let sit for at least 30 minutes (or up to 2 hours in the fridge) for fuller flavor.
  4. Preheat the grill: Heat your outdoor grill to medium-high or prepare an indoor grill pan until hot with visible grill marks.
  5. Grill the cauliflower: Place the marinated steaks on the grill and cook for 5-7 minutes per side until tender and nicely charred.
  6. Serve: Transfer to a serving platter, garnish with chopped parsley and lemon wedges, and enjoy your delicious grilled cauliflower.
