Ingredients:

  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound large shrimp, peeled and deveined
  • 8 ounces smoked sausage, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch squares
  • 1 green bell pepper, cut into 1-inch squares
  • 1 medium red onion, cut into wedges
  • Bamboo or metal skewers

Instructions:

  1. In a mixing bowl, combine olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper. Whisk until well blended.
  2. Add shrimp and sausage pieces to the marinade. Toss to coat evenly. Cover and refrigerate for 30 minutes.
  3. Thread marinated shrimp, sausage, red bell pepper, green bell pepper, and onion onto skewers, alternating ingredients.
  4. Preheat your grill to medium-high heat. If using a broiler, preheat it to high.
  5. Place skewers on the grill. Cook for 10-12 minutes, turning occasionally, until shrimp are pink and opaque and sausage is heated through.
  6. Remove skewers from the grill. Let rest for a few minutes before serving. Optionally drizzle with additional lemon juice.
