Ingredients:
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound large shrimp, peeled and deveined
- 8 ounces smoked sausage, cut into 1-inch pieces
- 1 red bell pepper, cut into 1-inch squares
- 1 green bell pepper, cut into 1-inch squares
- 1 medium red onion, cut into wedges
- Bamboo or metal skewers
Instructions:
- In a mixing bowl, combine olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper. Whisk until well blended.
- Add shrimp and sausage pieces to the marinade. Toss to coat evenly. Cover and refrigerate for 30 minutes.
- Thread marinated shrimp, sausage, red bell pepper, green bell pepper, and onion onto skewers, alternating ingredients.
- Preheat your grill to medium-high heat. If using a broiler, preheat it to high.
- Place skewers on the grill. Cook for 10-12 minutes, turning occasionally, until shrimp are pink and opaque and sausage is heated through.
- Remove skewers from the grill. Let rest for a few minutes before serving. Optionally drizzle with additional lemon juice.
