Ingredients:

  • 1 pound (450g) fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon soy sauce (low sodium preferred)
  • 1 teaspoon sesame oil
  • Salt and freshly ground black pepper to taste
  • Sesame seeds, for garnish (optional)

Instructions:

  1. Trim the ends of the green beans. Optionally, cut them in half for easier eating.
  2. Heat the olive oil in a large skillet or wok over medium-high heat until shimmering.
  3. Add the minced garlic and red pepper flakes (if using) to the hot oil. Sauté for about 30 seconds, or until fragrant. Be careful not to burn the garlic!
  4. Add the green beans to the skillet. Stir-fry continuously for 5-7 minutes, or until they are bright green and crisp-tender.
  5. Drizzle soy sauce and sesame oil over the green beans. Season with salt and pepper to taste. Toss to combine.
  6. Garnish with sesame seeds (if using) and serve immediately.
