Ingredients:
- 1 pound (450g) large shrimp, peeled and deveined
- 4 tablespoons (57g) unsalted butter
- 4 cloves garlic, minced
- 1/4 cup (60ml) dry white wine (like Pinot Grigio or Sauvignon Blanc)
- 2 tablespoons (30ml) fresh lemon juice
- 1/4 cup (15g) chopped fresh parsley
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- Cooked pasta (linguine, spaghetti, or your favorite) for serving
Instructions:
- Pat the shrimp dry with paper towels. Season with salt and pepper.
- Melt butter in a large skillet over medium heat. Add the minced garlic and sauté until fragrant (about 30 seconds - 1 minute). Be careful not to burn the garlic!
- Pour in the white wine and lemon juice. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side, or until pink and opaque. Don't overcook them!
- Stir in the parsley and red pepper flakes (if using). Taste and adjust seasoning with salt and pepper as needed.
- Toss the shrimp and sauce with the cooked pasta. Serve immediately as Garlic Butter Shrimp Scampi.
