Ingredients:

  • 4 bone-in, skin-on chicken thighs (approximately 1.5 lbs / 680 g)
  • 2 tablespoons unsalted butter, melted (30 g)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon garlic powder (5 g)
  • 1 teaspoon onion powder (5 g)
  • 1 teaspoon dried oregano (5 g)
  • 1 teaspoon dried thyme (5 g)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish (10 g)
  • Lemon wedges, for serving

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels to ensure crispy skin.
  3. In a small bowl, combine melted butter, olive oil, garlic powder, onion powder, oregano, thyme, salt, and pepper.
  4. Brush the marinade all over the chicken thighs, making sure to get under the skin for maximum flavor.
  5. Place the chicken thighs skin-side up in a baking dish.
  6. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Remove the chicken from the oven and let it rest for 5-10 minutes before serving. Garnish with fresh parsley and lemon wedges if desired.
