Ingredients:

  • 1.5 lbs (680g) cooked lobster meat, roughly chopped
  • 1/4 cup (60ml) mayonnaise
  • 2 tablespoons (30ml) finely chopped celery
  • 1 tablespoon (15ml) freshly squeezed lemon juice
  • 1 tablespoon (15ml) finely chopped fresh chives (optional)
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of sea salt, to taste
  • 4 New England-style top-split hot dog buns
  • 4 tablespoons (56g) unsalted butter, melted

Instructions:

  1. In a large bowl, gently combine the lobster meat, mayonnaise, celery, lemon juice, chives (if using), pepper, and salt. Be careful not to overmix.
  2. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  3. Brush the outside of each hot dog bun with melted butter.
  4. Heat a skillet or griddle over medium heat. Place the buttered buns in the skillet and toast until golden brown and crispy, about 2-3 minutes per side.
