Ingredients:
- 1.5 lbs (680g) cooked lobster meat, roughly chopped
- 1/4 cup (60ml) mayonnaise
- 2 tablespoons (30ml) finely chopped celery
- 1 tablespoon (15ml) freshly squeezed lemon juice
- 1 tablespoon (15ml) finely chopped fresh chives (optional)
- 1/4 teaspoon freshly ground black pepper
- Pinch of sea salt, to taste
- 4 New England-style top-split hot dog buns
- 4 tablespoons (56g) unsalted butter, melted
Instructions:
- In a large bowl, gently combine the lobster meat, mayonnaise, celery, lemon juice, chives (if using), pepper, and salt. Be careful not to overmix.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Brush the outside of each hot dog bun with melted butter.
- Heat a skillet or griddle over medium heat. Place the buttered buns in the skillet and toast until golden brown and crispy, about 2-3 minutes per side.
