Ingredients:

  • 4 Black Cod (Sablefish) fillets (approx. 6 oz each), skin-on
  • 1 tbsp Neutral oil (Avocado or Grapeseed oil)
  • 1 tsp Kosher salt
  • ½ tsp Cracked black pepper
  • ½ tsp Garlic powder
  • 2 Large Lemons (1 sliced into rounds, 1 for juicing)
  • 3 tbsp Unsalted butter, melted
  • 2 cloves Garlic, microplaned or finely minced
  • 1 tbsp Fresh parsley, chopped

Instructions:

  1. Pat the fillets extremely dry with paper towels. Rub the skin and flesh with neutral oil, then season generously with salt, pepper, and garlic powder. Let sit at room temperature for 10 minutes while preheating the grill to 400°F (200°C).
  2. Thoroughly clean and oil the grill grates. Place fillets skin-side down and close the lid. Grill for 5–6 minutes without moving to ensure the skin releases naturally and becomes crispy.
  3. Carefully flip the fillets. Place lemon slices directly on the grill. Whisk together melted butter, minced garlic, and lemon juice. Brush the mixture over the fillets during the final 3 minutes of cooking until an internal temperature of 145°F is reached.
