Ingredients:

  • 1.5 lb firm white fish (Halibut, Mahi-Mahi, or Cod), cut into 1-inch cubes
  • 1 large red onion, cut into 1-inch chunks
  • 1 medium red bell pepper, cut into 1-inch chunks
  • 1 medium yellow bell pepper, cut into 1-inch chunks
  • 1 lemon, sliced into thin rounds
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Add the fish cubes to the marinade and toss gently to coat. Let the fish marinate at room temperature for exactly 15 minutes.
  3. Slide the marinated fish, onion, and pepper chunks onto skewers, alternating colors and placing a lemon slice between each piece of fish, leaving a 1/2 inch gap at the ends.
  4. Preheat the grill to medium-high and lightly oil the grates.
  5. Place skewers on the grill, close the lid, and cook for 3-4 minutes per side until the fish is opaque and has a mahogany-colored char.
