Ingredients:
- 1.5 lb firm white fish (Halibut, Mahi-Mahi, or Cod), cut into 1-inch cubes
- 1 large red onion, cut into 1-inch chunks
- 1 medium red bell pepper, cut into 1-inch chunks
- 1 medium yellow bell pepper, cut into 1-inch chunks
- 1 lemon, sliced into thin rounds
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
Instructions:
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Add the fish cubes to the marinade and toss gently to coat. Let the fish marinate at room temperature for exactly 15 minutes.
- Slide the marinated fish, onion, and pepper chunks onto skewers, alternating colors and placing a lemon slice between each piece of fish, leaving a 1/2 inch gap at the ends.
- Preheat the grill to medium-high and lightly oil the grates.
- Place skewers on the grill, close the lid, and cook for 3-4 minutes per side until the fish is opaque and has a mahogany-colored char.
