Ingredients:

  • 1 lb cooked shrimp, peeled, deveined, and chilled
  • ½ cup celery, finely diced
  • ¼ cup red onion, minced
  • 2 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • ½ cup mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika

Instructions:

  1. Pat the chilled shrimp dry with paper towels. If the shrimp are large, cut them into bite-sized thirds to ensure every forkful has a balanced ratio of seafood to dressing.
  2. In a small bowl, combine the mayonnaise, lemon juice, zest, Dijon mustard, salt, and pepper. Whisk until the mixture is velvety and completely emulsified.
  3. Add the dried shrimp, diced celery, red onion, and fresh herbs to the large mixing bowl. Pour the dressing over the top and fold gently with a spatula until the shrimp are evenly coated.
