Ingredients:
- 1 lb cooked shrimp, peeled, deveined, and chilled
- ½ cup celery, finely diced
- ¼ cup red onion, minced
- 2 tbsp fresh dill, chopped
- 1 tbsp fresh parsley, chopped
- ½ cup mayonnaise
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tsp Dijon mustard
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp paprika
Instructions:
- Pat the chilled shrimp dry with paper towels. If the shrimp are large, cut them into bite-sized thirds to ensure every forkful has a balanced ratio of seafood to dressing.
- In a small bowl, combine the mayonnaise, lemon juice, zest, Dijon mustard, salt, and pepper. Whisk until the mixture is velvety and completely emulsified.
- Add the dried shrimp, diced celery, red onion, and fresh herbs to the large mixing bowl. Pour the dressing over the top and fold gently with a spatula until the shrimp are evenly coated.
