Ingredients:

  • 4 cod fillets (about 6 oz each/170 g)
  • 1 lemon, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 cup vegetable or fish stock (240 ml)
  • 1 clove garlic, minced
  • 1 shallot, finely chopped

Instructions:

  1. Fill a large pot with water and bring it to a gentle boil. Place the steamer basket above the boiling water.
  2. Pat cod fillets dry with paper towels. Drizzle with olive oil and season with salt and pepper.
  3. Lay lemon slices and chopped herbs on top of each fillet.
  4. If using broth, add stock, garlic, and shallots to the pot beneath the steamer. Place the seasoned fish on a heatproof plate and place it in the steamer basket.
  5. Cover the pot with a lid and steam for 8-10 minutes until the fish flakes easily with a fork and is opaque.
  6. Carefully remove the plate from the steamer. Drizzle with additional olive oil or lemon juice if desired and garnish with herbs.
