Ingredients:
- 4 cod fillets (about 6 oz each/170 g)
- 1 lemon, thinly sliced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 cup vegetable or fish stock (240 ml)
- 1 clove garlic, minced
- 1 shallot, finely chopped
Instructions:
- Fill a large pot with water and bring it to a gentle boil. Place the steamer basket above the boiling water.
- Pat cod fillets dry with paper towels. Drizzle with olive oil and season with salt and pepper.
- Lay lemon slices and chopped herbs on top of each fillet.
- If using broth, add stock, garlic, and shallots to the pot beneath the steamer. Place the seasoned fish on a heatproof plate and place it in the steamer basket.
- Cover the pot with a lid and steam for 8-10 minutes until the fish flakes easily with a fork and is opaque.
- Carefully remove the plate from the steamer. Drizzle with additional olive oil or lemon juice if desired and garnish with herbs.
