Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined
- 2 tbsp (28g) unsalted butter
- 1 tbsp (15ml) olive oil
- 12 oz (340g) penne pasta, dried
- 3 cups (710ml) low-sodium chicken broth
- 3 cloves (15g) garlic, minced
- 1 small (100g) shallot, finely diced
- 1 cup (150g) frozen peas
- 1 cup (100g) carrots, thinly sliced into coins
- 1 cup (120g) zucchini, diced
- 1 cup (30g) baby spinach, packed
- 1/2 cup (50g) Parmesan cheese, freshly grated
- 1 tbsp (15ml) lemon juice, freshly squeezed
- 1 tsp (2g) lemon zest
- 2 tbsp (30g) fresh parsley, chopped
Instructions:
- Heat the olive oil and 1 tbsp of butter over medium-high heat in a 5-quart Dutch oven or deep sauté pan.
- Pat the shrimp dry to ensure a better sear. Add shrimp to the pot and cook for 1–2 minutes per side until they just turn pink and opaque. Remove them immediately to a plate.
- In the same pot, add the remaining tablespoon of butter. Sauté the shallots and garlic for 1 minute until fragrant and translucent.
- Pour in the chicken broth and bring to a boil. Stir in the dried penne and reduce heat to medium-low.
- Cover and simmer for 10–12 minutes, stirring occasionally to prevent sticking, until the pasta is al dente and most of the liquid has been absorbed.
- Stir in the frozen peas, sliced carrots, and diced zucchini. Cook for 2-3 minutes until the vegetables are tender.
- Stir in the baby spinach until just wilted.
- Remove from heat. Stir in the grated Parmesan cheese, lemon juice, lemon zest, and chopped parsley to create a velvety sauce.
- Fold the seared shrimp back into the pot, utilizing residual heat to finish cooking them. Serve immediately.
