Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined
- 12 oz (340g) linguine or fettuccine
- 1 tbsp (15ml) olive oil
- salt to taste
- black pepper to taste
- 3 tbsp (42g) unsalted butter
- 4 cloves (20g) garlic, minced
- 1 tsp (2g) red pepper flakes
- 2 tbsp (32g) tomato paste
- 1 cup (240ml) heavy cream
- 1/2 cup (120ml) pasta water, reserved
- 1/2 cup (50g) freshly grated parmesan cheese
- 1 tbsp (15ml) fresh lemon juice
- 1/4 cup (10g) fresh parsley, chopped
Instructions:
- Pat the shrimp completely dry with paper towels and season with salt and pepper.
- Heat 1 tbsp olive oil in a 12-inch deep skillet over medium-high heat until shimmering.
- Add shrimp in a single layer and sear for 1–2 minutes per side until just opaque. Immediately remove shrimp to a plate.
- Lower heat to medium and melt 3 tbsp butter in the same skillet.
- Add minced garlic and red pepper flakes, sautéing for 1 minute until fragrant.
- Stir in the tomato paste and cook for 2 minutes, stirring constantly, until the paste darkens to a deep brick red.
- Pour in the heavy cream and stir vigorously to incorporate the tomato paste; simmer for 3–5 minutes until slightly thickened.
- Stir in the grated parmesan cheese until melted and smooth, then stir in the lemon juice.
- Add the cooked pasta directly from the pot into the sauce.
- Pour in the reserved pasta water and toss to emulsify the sauce until it clings to the pasta.
- Return the seared shrimp to the pan and garnish with chopped fresh parsley.
