Ingredients:
- 2 cups (250g) all-purpose flour, plus extra for dusting
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup (1 stick/113g) unsalted butter, very cold and cut into cubes
- 3/4 cup (180ml) whole milk, chilled
- 8 ounces (225g) cooked shrimp, peeled, deveined, and coarsely chopped
- 6 ounces (170g) cooked crab meat, picked over for shells
- 1/4 cup (60ml) mayonnaise
- 2 tablespoons finely chopped celery
- 2 tablespoons finely chopped fresh dill
- 1 tablespoon lemon juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 cup (30g) shredded cheddar cheese
- 1 green onion, thinly sliced (for garnish, optional)
Instructions:
- Whisk together flour, baking powder, and salt in a large bowl.
- Cut in cold butter using a pastry blender until the mixture resembles coarse crumbs.
- Gradually add chilled milk, mixing until just combined. Dough will be slightly shaggy.
- Turn the dough out onto a lightly floured surface. Gently knead 5-6 times until it comes together.
- Roll the dough to 1/2-inch thickness.
- Cut out biscuits using a biscuit cutter.
- Place biscuits on a parchment-lined baking sheet.
- In a small bowl, combine chopped shrimp, crab meat, mayonnaise, celery, dill, lemon juice, garlic powder, and pepper. Mix gently to combine.
- Top each biscuit with a generous spoonful of the shrimp and crab filling.
- Sprinkle the biscuits with cheddar cheese.
- Bake in a preheated oven at 400°F (200°C) for 18-22 minutes, or until the biscuits are golden brown and the filling is hot and bubbly.
- Garnish with sliced green onion, if desired.
