Ingredients:

  • 2 cups (250g) all-purpose flour, plus extra for dusting
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup (1 stick/113g) unsalted butter, very cold and cut into cubes
  • 3/4 cup (180ml) whole milk, chilled
  • 8 ounces (225g) cooked shrimp, peeled, deveined, and coarsely chopped
  • 6 ounces (170g) cooked crab meat, picked over for shells
  • 1/4 cup (60ml) mayonnaise
  • 2 tablespoons finely chopped celery
  • 2 tablespoons finely chopped fresh dill
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 cup (30g) shredded cheddar cheese
  • 1 green onion, thinly sliced (for garnish, optional)

Instructions:

  1. Whisk together flour, baking powder, and salt in a large bowl.
  2. Cut in cold butter using a pastry blender until the mixture resembles coarse crumbs.
  3. Gradually add chilled milk, mixing until just combined. Dough will be slightly shaggy.
  4. Turn the dough out onto a lightly floured surface. Gently knead 5-6 times until it comes together.
  5. Roll the dough to 1/2-inch thickness.
  6. Cut out biscuits using a biscuit cutter.
  7. Place biscuits on a parchment-lined baking sheet.
  8. In a small bowl, combine chopped shrimp, crab meat, mayonnaise, celery, dill, lemon juice, garlic powder, and pepper. Mix gently to combine.
  9. Top each biscuit with a generous spoonful of the shrimp and crab filling.
  10. Sprinkle the biscuits with cheddar cheese.
  11. Bake in a preheated oven at 400°F (200°C) for 18-22 minutes, or until the biscuits are golden brown and the filling is hot and bubbly.
  12. Garnish with sliced green onion, if desired.
