Ingredients:

  • 1 pound (450g) ground beef (80/20 blend is ideal)
  • 1/2 pound (225g) ground pork
  • 1 cup (120g) fresh bread crumbs (made from day-old Italian or French bread)
  • 1/2 cup (50g) grated Parmesan cheese, plus extra for serving
  • 1/4 cup (30g) finely chopped fresh parsley
  • 2 large eggs, lightly beaten
  • 2 cloves garlic, minced (approx. 1 teaspoon)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup (60ml) milk or water
  • 2 tablespoons olive oil

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together eggs, milk/water, and minced garlic.
  3. In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, Italian seasoning, salt, and pepper.
  4. Pour the egg mixture over the meat mixture. Gently mix with your hands until just combined. Do not overmix.
  5. Roll the mixture into 1-inch meatballs. A small ice cream scoop can help ensure uniform size.
  6. Place the meatballs on the prepared baking sheet, leaving a little space between each one.
  7. Drizzle the meatballs with olive oil.
  8. Bake for 25-30 minutes, or until the meatballs are cooked through and lightly browned. An internal temperature of 165°F (74°C) is ideal.
  9. Serve hot with your favourite pasta sauce, pasta, or in meatball subs. Sprinkle with extra Parmesan cheese, if desired.
