Ingredients:
- 1 pound (450g) ground beef (80/20 blend is ideal)
- 1/2 pound (225g) ground pork
- 1 cup (120g) fresh bread crumbs (made from day-old Italian or French bread)
- 1/2 cup (50g) grated Parmesan cheese, plus extra for serving
- 1/4 cup (30g) finely chopped fresh parsley
- 2 large eggs, lightly beaten
- 2 cloves garlic, minced (approx. 1 teaspoon)
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup (60ml) milk or water
- 2 tablespoons olive oil
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together eggs, milk/water, and minced garlic.
- In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, Italian seasoning, salt, and pepper.
- Pour the egg mixture over the meat mixture. Gently mix with your hands until just combined. Do not overmix.
- Roll the mixture into 1-inch meatballs. A small ice cream scoop can help ensure uniform size.
- Place the meatballs on the prepared baking sheet, leaving a little space between each one.
- Drizzle the meatballs with olive oil.
- Bake for 25-30 minutes, or until the meatballs are cooked through and lightly browned. An internal temperature of 165°F (74°C) is ideal.
- Serve hot with your favourite pasta sauce, pasta, or in meatball subs. Sprinkle with extra Parmesan cheese, if desired.
