Ingredients:
- 4 (6 oz) cod fillets
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 1 cup Panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper
- 1/4 cup mayonnaise
- 1 tbsp lemon juice
- 1 tbsp Dijon mustard
Instructions:
- Preheat your oven to 425°F (218°C) or your air fryer to 400°F (200°C) and line your baking sheet with parchment paper.
- Use paper towels to press firmly on both sides of the cod fillets until they are completely dry. Season both sides evenly with salt and pepper.
- In a shallow bowl, whisk together the mayonnaise, lemon juice, and Dijon mustard until smooth.
- In a second shallow bowl, combine Panko breadcrumbs, grated Parmesan, smoked paprika, garlic powder, onion powder, and cayenne pepper.
- Dip each fillet into the mayonnaise mixture, coating it entirely, then press it firmly into the Panko mixture, pressing down hard to ensure the crumbs are embedded.
- For oven baking: Place fillets on the prepared sheet and bake for 12–15 minutes until the crust is mahogany-colored and the fish flakes easily. For air frying: Place fillets in the basket in a single layer and air fry for 10–12 minutes, flipping halfway through.
