Ingredients:
- 1 lb (450g) Cooked Flaky White Fish (Cod, Haddock, or Pollock), cut into bite-sized pieces
- 8 oz (225g) Cooked Shrimp (or Prawns), peeled and deveined
- 4 tbsp (60g) Unsalted Butter
- 1/4 cup (30g) All-Purpose Flour (Plain Flour)
- 2 cups (475ml) Whole Milk
- 1/2 tsp Sea Salt
- 1/4 tsp Black Pepper
- 1/4 tsp Ground Nutmeg
- 1 tbsp Fresh Lemon Juice
- 1/2 cup (50g) Grated Cheddar Cheese
- 1/4 cup (25g) Grated Parmesan Cheese
- 1 cup (100g) Panko Breadcrumbs
- 2 tbsp (30g) Melted Unsalted Butter
- 1 tbsp Chopped Fresh Parsley
Instructions:
- Melt butter in a saucepan. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, and cook until thickened (about 5 minutes). Stir in salt, pepper, nutmeg, and lemon juice. Remove from heat.
- Add the cooked fish and shrimp to the sauce. Gently stir to combine.
- Stir in cheddar and parmesan cheese until melted and the sauce is cheesy and smooth.
- Pour the seafood mixture into the prepared baking dish.
- Combine panko breadcrumbs, melted butter, and parsley in a small bowl.
- Sprinkle the breadcrumb mixture evenly over the seafood mixture.
- Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until golden brown and bubbly.
- Let the casserole rest for 5 minutes before serving.
