Ingredients:

  • 1 lb (450g) Cooked Flaky White Fish (Cod, Haddock, or Pollock), cut into bite-sized pieces
  • 8 oz (225g) Cooked Shrimp (or Prawns), peeled and deveined
  • 4 tbsp (60g) Unsalted Butter
  • 1/4 cup (30g) All-Purpose Flour (Plain Flour)
  • 2 cups (475ml) Whole Milk
  • 1/2 tsp Sea Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Ground Nutmeg
  • 1 tbsp Fresh Lemon Juice
  • 1/2 cup (50g) Grated Cheddar Cheese
  • 1/4 cup (25g) Grated Parmesan Cheese
  • 1 cup (100g) Panko Breadcrumbs
  • 2 tbsp (30g) Melted Unsalted Butter
  • 1 tbsp Chopped Fresh Parsley

Instructions:

  1. Melt butter in a saucepan. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, and cook until thickened (about 5 minutes). Stir in salt, pepper, nutmeg, and lemon juice. Remove from heat.
  2. Add the cooked fish and shrimp to the sauce. Gently stir to combine.
  3. Stir in cheddar and parmesan cheese until melted and the sauce is cheesy and smooth.
  4. Pour the seafood mixture into the prepared baking dish.
  5. Combine panko breadcrumbs, melted butter, and parsley in a small bowl.
  6. Sprinkle the breadcrumb mixture evenly over the seafood mixture.
  7. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until golden brown and bubbly.
  8. Let the casserole rest for 5 minutes before serving.
