Ingredients:
- 4 albacore tuna steaks (about 6 oz/170g each)
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- ½ cup soy sauce (120ml)
- 2 tablespoons honey (30g)
- 1 tablespoon fresh lime juice (15ml)
- 1 tablespoon fresh orange juice (15ml)
- 1 teaspoon grated fresh ginger
- 1 teaspoon minced garlic
Instructions:
- Season tuna steaks with salt and pepper. Drizzle with olive oil and set aside for 15 minutes.
- In a small bowl, whisk together soy sauce, honey, lime juice, orange juice, ginger, and garlic. Set aside for later.
- Preheat a heavy skillet over medium-high heat until hot.
- Add marinated tuna steaks to the skillet. Sear for 2-3 minutes on each side (internal temperature should reach 115°F/46°C for medium-rare).
- Reduce the heat to medium, pour the glaze over tuna, and cook for an additional 1-2 minutes.
- Remove from the skillet, let rest for a minute, and slice on the bias. Drizzle with remaining glaze and serve.
