Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined
- 1 lb (450g) sea scallops, patted dry
- 1 lb (450g) mussels, scrubbed and debearded
- 1 lb (450g) cod fillets (or haddock), cut into 1-inch pieces
- 1/4 cup (60ml) olive oil
- 4 cloves garlic, minced
- 1/4 cup (60ml) dry white wine (like Sauvignon Blanc or Pinot Grigio)
- 1/4 cup (60g) unsalted butter, cut into pieces
- 1/4 cup (60ml) fresh lemon juice
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
Instructions:
- Prepare the Seafood: Pat the scallops dry. Ensure mussels are clean and cod is cut into pieces.
- Sauté Garlic: Heat olive oil in the skillet. Sauté the garlic until fragrant, but not browned.
- Deglaze with Wine: Add the white wine and let it simmer for a minute, scraping up any browned bits from the bottom of the pan.
- Add Mussels: Add the mussels to the pan, cover, and cook until they open (about 5-7 minutes). Discard any mussels that don't open.
- Add Cod and Shrimp: Add the cod and shrimp to the skillet. Cook for 2-3 minutes, or until the shrimp turns pink and the cod is nearly cooked through.
- Add Scallops: Add the scallops to the skillet. Cook for 1-2 minutes per side, or until golden brown and cooked through.
- Finish with Butter, Lemon, and Parsley: Stir in the butter, lemon juice, red pepper flakes (if using), and parsley. Season with salt and pepper to taste. Serve immediately.
