Ingredients:

  • 1 cup unsalted butter (226 g)
  • 1 tablespoon minced garlic (15 g)
  • 1 teaspoon paprika (2 g)
  • 1 teaspoon lemon juice (5 ml)
  • Salt and black pepper to taste
  • 1 cup olive oil (240 ml)
  • 2 tablespoons Cajun seasoning (30 g)
  • 1 tablespoon minced garlic (15 g)
  • 1 teaspoon cayenne pepper (2 g, adjust to taste)
  • 1 tablespoon apple cider vinegar (15 ml)
  • Salt to taste
  • ½ cup yellow mustard (120 g)
  • ¼ cup apple cider vinegar (60 ml)
  • 2 tablespoons honey (30 g)
  • 1 tablespoon hot sauce (15 ml)
  • Salt and pepper to taste

Instructions:

  1. Melt the butter in a medium saucepan over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Stir in paprika, lemon juice, salt, and pepper; mix well.
  4. Remove from heat and set aside.
  5. In the same saucepan, combine olive oil and Cajun seasoning.
  6. Add minced garlic and cayenne pepper; stir over medium heat for 5 minutes.
  7. Stir in apple cider vinegar and salt; mix and adjust seasoning.
  8. Remove from heat and set aside.
  9. In a mixing bowl, whisk together yellow mustard, apple cider vinegar, honey, and hot sauce.
  10. Season with salt and pepper to taste.
  11. Mix until fully combined.
  12. Transfer all sauces to serving bowls.
  13. Serve immediately alongside your seafood boil.
