Ingredients:

  • 1 lb (450g) fresh mantis shrimp, cleaned
  • 2 tablespoons (30ml) olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon (5g) red pepper flakes
  • 1 tablespoon (15ml) soy sauce
  • 1 teaspoon (5g) sea salt
  • ½ teaspoon (2g) black pepper
  • 1 tablespoon (15ml) fresh lime juice
  • 2 tablespoons (30ml) chopped fresh cilantro
  • 2 cups (100g) mixed salad greens
  • 1 cup (150g) cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • ¼ cup (60ml) rice vinegar
  • 1 tablespoon (15ml) honey

Instructions:

  1. Rinse and clean mantis shrimp under cold water. Pat dry with paper towels and place in a bowl.
  2. In a separate bowl, combine olive oil, minced garlic, red pepper flakes, soy sauce, salt, pepper, lime juice, and cilantro. Pour marinade over mantis shrimp and toss to coat. Allow to marinate for 10 minutes.
  3. Heat a large skillet over medium-high heat. Add marinated mantis shrimp to the skillet in a single layer. Cook for about 6-8 minutes, turning occasionally, until they turn bright red and opaque.
  4. In a mixing bowl, combine salad greens, cherry tomatoes, and cucumber. In a small bowl, whisk together rice vinegar and honey. Drizzle over the salad and toss gently.
  5. Serve the cooked mantis shrimp over a bed of salad; garnish with additional cilantro if desired.
