Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined
- 4 tbsp (56g) unsalted butter, divided
- 4 cloves garlic, minced
- 1/4 cup (60ml) dry white wine
- 2 tbsp (30ml) lemon juice, freshly squeezed
- 2 tbsp (30ml) chopped fresh parsley
- 1/4 tsp red pepper flakes
- Salt and freshly ground black pepper to taste
- Cooked linguine or spaghetti, for serving (about 1 lb / 450g)
- Grated Parmesan cheese, for serving (optional)
Instructions:
- Pat the shrimp dry with paper towels. Season with salt and pepper. Prepare the shrimp for this delightful recipe for shrimp scampi.
- Melt 2 tablespoons of butter in the skillet over medium heat. Add garlic and sauté until fragrant (about 30 seconds).
- Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side, or until pink and opaque. Remove shrimp from skillet and set aside.
- Add the remaining 2 tablespoons of butter to the skillet. Pour in the white wine and lemon juice. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Return the shrimp to the skillet. Add the parsley and red pepper flakes. Toss to coat. Serve immediately over cooked pasta. Sprinkle with Parmesan cheese, if desired.
