Ingredients:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 4 tbsp (56g) unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 cup (60ml) dry white wine
  • 2 tbsp (30ml) lemon juice, freshly squeezed
  • 2 tbsp (30ml) chopped fresh parsley
  • 1/4 tsp red pepper flakes
  • Salt and freshly ground black pepper to taste
  • Cooked linguine or spaghetti, for serving (about 1 lb / 450g)
  • Grated Parmesan cheese, for serving (optional)

Instructions:

  1. Pat the shrimp dry with paper towels. Season with salt and pepper. Prepare the shrimp for this delightful recipe for shrimp scampi.
  2. Melt 2 tablespoons of butter in the skillet over medium heat. Add garlic and sauté until fragrant (about 30 seconds).
  3. Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side, or until pink and opaque. Remove shrimp from skillet and set aside.
  4. Add the remaining 2 tablespoons of butter to the skillet. Pour in the white wine and lemon juice. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Return the shrimp to the skillet. Add the parsley and red pepper flakes. Toss to coat. Serve immediately over cooked pasta. Sprinkle with Parmesan cheese, if desired.
