Ingredients:

  • 4 large tilapia fillets (approx. 6 oz / 170g each)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 3 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Use paper towels to pat each tilapia fillet thoroughly dry on both sides to ensure proper searing and prevent steaming.
  3. Combine the 1 tsp smoked paprika, 1 tsp garlic powder, 1/2 tsp dried oregano, 1/2 tsp sea salt, and 1/4 tsp cracked black pepper in a small bowl.
  4. Coat both sides of the fish with the spice mix, pressing it into the flesh with your fingers.
  5. Stir the 2 cloves minced garlic and 1 tbsp lemon juice into the 3 tbsp melted unsalted butter.
  6. Place fillets on a parchment lined tray until they are spaced 2 inches apart.
  7. Brush half of the lemon butter mixture over the tops of the fillets.
  8. Bake for 10 minutes until the edges look opaque and firm.
  9. Remove from oven, drizzle with remaining butter, and bake 2 more minutes until the center flakes easily with a fork.
  10. Sprinkle with 1 tbsp fresh parsley and let sit for 3 minutes.
